Ground Beef Helper Recipes
4 eggs beaten
¼ teaspoon salt
½ cup sugar
2 teaspoons vanilla
1 cup instant non-fat dry milk+ 3 cups water(3 Cups non-fat milk) 1 ½ cups cooked rice
Preheat: Oven to 300F. Combine all ingredients. Pour into a buttered 2 quart baking dish. Bake uncovered at 300 F for 30 minutes. Stir to mix rice. Return to oven and bake for 1 to ½ hours longer.
Makes 6 to 8 servings
2 cups soft bread, cubed
½ cup shredded cheese
5 tablespoons margarine or butter, melted
1 cup cooked canned peas
2 tablespoons onion, chopped
3 tablespoons all-purpose flour
1 teaspoon salt
¼ teaspoon pepper
½ cup instant non-fat dry milk + 1 ½ cups water (1 ½ cups non-fat milk)
1 cup meat (beef, chicken, or pork) cut up, cooked
1 large tomato, sliced
Preheat oven to 350 F. Mix bread cubes, cheese and 2 tablespoons melted butter. Spread half of the mixture in greased 1 quart casserole dish, and top with peas. Cook onions in 3 tablespoons margarine until onion is tender. Blend in flour and seasonings. Cook, over low heat, stirring until mixture is bubbly. Remove from heat, add milk and return to a boil, stirring constantly. Boil and stir for 1 minute. Stir in the meat and pour over the peas. Arrange tomato slices on top and sprinkle with remaining bread mixture. Bake, uncovered for 25 minutes.

1 lb. ground beef or turkey
1/2 cup "Helper Mix"
2 cups uncooked egg noodles
2 cups water
1/2 cup light sour cream or yogurt
Brown 1 pound ground beef or turkey and drain off the fat. Add 2 cups water 1/2 cup "Helper" mix and 2 cups uncooked egg noodles and stir. Bring to a boil, reduce heat and simmer covered for 15-20 minutes or until noodles are tender. Top with 1/2 cup light sour cream or plain yogurt. Serve immediately.
1 lb. ground beef or ground turkey
6 peeled potatoes sliced thin
1 cup frozen mixed peas and carrots
1/2 cup + 1 tablespoon "Helper Mix"
3/4 cup water
Brown ground beef or turkey and drain off the fat. Add 3/4 cup water, 6 peeled potatoes(sliced very thin), 1 cup of frozen mixed peas and carrots and 1/2 cup plus 1 tablespoon "helper" mix. Simmer covered 20-30 minutes or until potatoes are tender. Stir, uncover and cool until excess water is evaporated.
Use this homemade hamburger mix in the four dishes on the right (Ground Beef Stroganoff, Hearty Potato Casserole, Skillet Lasagna and Chili Tomato Mac. ).
2 cups dry "instant” milk
1 cup corn starch
1/4 cup unsalted chicken or beef bouillon
2 tablespoons onion flakes
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon black pepper
2 tablespoons dried parsley
1 tablespoon garlic powder
Mix the ingredients together and store in an airtight container. Good for 4-6 dinners.
1 lb. lean ground beef
1/2 cup "Helper Mix"
1 chopped onion
2 cups of water
16 oz. tomato sauce
3 cups dry noodles
1/4 cup parmesan cheese
In a large skillet brown 1 pound of lean ground beef, crumble. Drain off the fat and add: 1/2 cup "Helper" mix,l chopped onion, 2 cups water, 16 oz. of tomato sauce, 3 cups dry noodles and 1/4 cup Parmesan cheese. Bring to a boil. Reduce heat and simmer 15 minutes, stirring until thickened. Top with 2 cups mozzarella cheese five minutes before serving; turn off heat, stop stirring and allow cheese
to melt.
1 lb. ground beef or turkey

Brown 1 pound ground beef or turkey and drain off the fat. Add 1 cup water, and 1 1/2 cups of uncooked macroni,2 15oz. cans chopped tomatoes, 1 tablespoon chili powder and 1/2 cup of the "Helper" mix. Simmer covered 20 minutes or until macaroni is tender.
3 medium onions
½ to 1 c. celery
¾ c. uncooked rice
1 lb. hamburger browned
1 medium onion
1 can tomato soup
3 potatoes, sliced
Place the vegetables in a greased casserole in layers, as given . Sprinkle each layer with rice, salt, and pepper. Put meat on top and pour tomato soup over. Cover and bake at 300-350 for 2 hours.
1 lb. hamburger
2 tsp. vinegar
½ lb. bacon, diced
½ c. white sugar
½ c. chopped onion
15 oz. pork & beans
½ c. catsup
½ c. brown sugar
15 oz. can kidney beans
1 tsp. dry mustard
15 oz. can lima or butter beans
Cook hamburger, bacon and onion together and drain. Mix all ingredients together well and place in 2 qt. casserole. Bake at 350 for 40 minutes.
3 c. water or broth
1 c. nonfat dry milk powder
3 Tbl. Flour
1 c. cooked vegetables or meat
Place liquid in saucepan. Combine nonfat dry milk and flour. Sprinkle over water. Stir until smooth. Cook over low heat, stirring constantly, until mixture thickens. Add cooked vegetables or meat. Heat thoroughly and serve.
1 c. canned meat, chicken, beef or pork
1 can carrots, corn, or peas
4 c. water
1 c. cooked rice, macaroni, or spaghetti broken into 1 inch pieces
1 small onion, chopped
Salt and pepper.
Drain meat and rinse with hot water to remove extra fat. Place water, meat, and onion in a large saucepan. Bring to a boil and simmer 20 minutes,. Add vegetables with juice and rice or pasta. Simmer 15-20 minutes. Season to taste.
1 c. chopped carrots
½ chopped onion, small
¼ c. flour
2 6 oz. cans tuna, drained
1 c. chopped celery
1 Tbl. Oleo
6 c. skim milk
2 c. macaroni, cooked
Cook carrots, and celery in small amount of water, until tender. Brown onions in oleo in large pan. Add milk and flour stirring constantly (Slowly add in milk). Cook on medium until thickened. Add tuna, macaroni, and chopped cooked vegetables to soup. Heat 10 minutes.
1/3 c. chopped onions, browned in 1 tsp. oleo
2 c. hot cooked rice
1 can chicken, drained and rinsed
1 pkg. Frozen broccoli , partially cooked
1 can (10 ¾ oz.) condensed cream of mushroom soup.
½ c. shredded Cheddar cheese
To browned onions , stir in rice, chicken, broccoli, and soup. Pour into 1 ½ quart baking dish top with cheese. Bake at 350 for 23-25 minutes.
1 lb. lean ground beef
2 ½ c. water

1 8oz. can tomato sauce
1 1/3 8oz. envelope dry onion soup mix
In 10-inch skillet brown ground beef, drain. Sprinkle uncooked noodles over meat. Combine water, tomato sauce and onion soup mix. Pour over noodles in the skillet. DO NOT STIR. Cover and bring to a boil. Reduce heat and simmer about 30 minutes or until noodles are tender. Stir and serve.
3 c. cooked noodles
1 lb. ground beef
1 large onion, thinly sliced
2 cans cut green beans
3 c. canned or fresh tomatoes or tomato juice
Season to taste.
In greased casserole or baking dish, spread ½ of the cooked noodles evenly. Over this, spread ½ of the cooked meat; then ½ of the thinly sliced onion; then 1 can of beans. Season to taste. Add the other half of each ingredient in layers as before. Pour the crushed tomatoes over all. Bake at 375 for 1 hour.
1 head cauliflower
1 tsp. prepared mustard
1/4 cup butter, cut into pieces
1/2 cup grated Parmesan cheese 1 tsp. mayonnaise
Steam whole head of cauliflower for 30 mintues. Drain and place on a pie plate. Preheat oven to 375 . In mixing bowl, combiine mayonnaise and mustard,spread the mixture over cauliflower and dot with pats of butter. Sprinkle generously with Parmesan cheese. Bake at 375 uncovered, for about 30 minutes or until the cheese. is brown.
1 large head cauliflower
1/8 teaspoon garlic ppowder
1/2 cup seasoned bread crumbs 1/8 teaspoon salt
2 Tbls. grated Parmesan cheese
1 pinch red pepper flakes
1/4 C. margarine,melted
1 pinch dried oregano
Clean cauliflower,and trim off leaves and any brown spots. Place the whole head of cauliflower into a steamer basket,place the basket in a large pot, and add one inch of water. Cover, and bring to a boil over medium heat. Cook for about 20 minutes or until tender. Preheat the oven to 375. In a medium bowl mix together the bread crumbs, Parmesan cheese,melted margarine. Season with garlic powder,salt,red pepper flakes, and oregano, and mix well. Place the head of cauliflower into a baking dish, and coat with the bread crumb mixture. Bake for 10-15 minutes or until golden brown.
3/4 cup sugar

1 teaspoon baking soda
1/2 teaspoon salt
1 beaten egg
1 (16-20 oz.) can fruit cocktail in natural juice
1 tsp. vanilla
Topping:
1/2 cup brown sugar
1/4 cup chopped nuts(optional)
Sift all dry ingredients together in large bowl. Combine beaten egg, fruit cocktail and vanilla.
Add dry ingredients ,mix well. Pour into greased 9x9 baking pan. Sprinkle with brown sugar and nuts. Bake at 350 for 45 minutes. Serve warm or cooled.
3/4 cup coarsely crushed cereal flakes
1/2 teaspoon cinnamon
1 package white angel food cake mix
Heat oven to 350. Mix cereal and cinnamon. Prepare cake mix as directed on package.,fold in cereal mixture into batter. Pour into ungreased bundt pan. Bake and cool as directed on cake mix. Serve with fresh fruit if desired. Serves 12.

1/4 cup raisins
1 1/2 cup (4oz.) plain nonfat or low fat yogurt
2 oz. Swiss cheese,diced(low fat or non -fat) (optiional)
Place apple and carrots in small bowl,sprinkle with lemon juice, and toss. Add raisins,cheese, and yogurt;mix well.
